Zesty Pineapple Chicken Skillet is one of the healthy dinner recipes that I suggest you to try. This is a healthy recipe and it is tasty, satisfying and affordable.
Using a vegetable peeler, peel the carrots. Slice in quarters lengthwise and chop into small pieces.
Cut the top and bottom off the onion and discard. Remove the skin and discard. Cut the onion in half. Slice thin half moon shaped slices. Chop these slices into small pieces.
Cut the bell pepper in half. Remove the stem, seeds, and inner pulp and discard. Slice thin vertical strips. Dice these strips into small pieces.
Cut the chicken breast lengthwise. Chop into bite size pieces.
Heat the oil in a large skillet over medium-high heat. Add the chicken and seasonings (last 5 ingredients) and cook for approximately 4 minutes or until the chicken is browned on all sides.
Add carrots and onions and saute for 5 minutes or until the chicken is cooked all the way through (at least 165º F).
Stir in rice, pineapple, green pepper, and BBQ sauce.
Bring to a boil. Cover and reduce heat to low. Simmer for five minutes. Remove from heat and let the pan sit for five minutes. (Do not remove the lid; the steam is cooking the rice).
Remove lid to stir. Replace lid and allow the pan to sit for 5-10 minutes (this gives all the flavors a chance to mix). Serve warm and enjoy your healthy dinner.
