  • 1 T Olive Oil
  • 12 oz cooked shrimp with tails removed
  • 12 oz chicken breast
  • 1 t Creole seasoning
  • 1 medium onion
  • 14 oz diced tomatoes or about 4 medium-sized tomatoes.
  • 1 C chicken broth
  • 1/2 C barbeque sauce
  • 2 C instant brown rice, uncooked or 4 C of cooked brown rice

Diet tips:

Diet tip 1.

  • You can cook brown rice (about 45 minutes) in advance, cool it, then chill or freeze it. Use 4 C of cooked brown rice for this healthy dinner recipe.
  • If you want to save your time I will recommend Trader Joe's Quick-Cook Organic Brown Basmati Rice or Trader Joe's frozen organic brown rice. It will take 10-15 minutes to make this rice ready.
  • You're getting the benefits of the brown rice and you not going to spend a lot of time for cooking.

Diet tip 2.

  • If you don’t have fresh tomatoes I recommend to use Eden Organic diced tomatoes.
  • And because they are organic you will get almost a double level of flavonoids, compare to conventionally grown tomatoes. Flavonoids are phytonutrients that fight inflammation and prevent certain type of cancer.

Diet tip 3.

  • For BBQ sauce look for brand without monosodium-glutamate and any artificial ingredients.
